RAW FOOD DINNER PARTY


For my first Raw Food Dinner Party, I went all out and made 3 big dishes; Sprouted Wild Rice Salad, Raw Lasagna and Raw Chocolate Mint Squares.

For those who want to tries these recipes at home, here you are...


SPROUTED WILD RICE SALAD


2 cups red leaf lettuce chopped
3 cups sprouted wild rice *
3 tomatoes, chopped
1/4 cup olive oil
1 lemon, juice of
1 cup mashed avocado
1/3 cup orange juice
1/2 cup Parsley, chopped
Cilantro to Taste
4 Tbs. soaked raisins
1 inch grated or juiced ginger
3 Tbs. maple syrup
2 Tbs. nama shoyu, or tamari sauce

Mix all ingredients except the lettuce in a bowl. keep to the side.
large serving bowl spread around the chopped lettuce.
Pour bowl 1 onto bowl 2, garnish with spring sprouts.


* Wild rice is not a grain, but a seed. It is in fact not at all related to rice, but named that way because of its appearance. Wild rice grows in Canada and the northern United States, and is still harvested from the wild. It is a really nutritious and hearty addition to the sunfood cuisine. Wild rice may be eaten raw, but has to be sprouted beforehand. Soak a cup or two of wild rice for 24 hours in a jar. Then drain the water, and rinse two times a day for the next two or three days until the rice is soft enough to eat. It usually takes 2 days of sprouting (plus one day of soaking). I like to soak wild rice in a large, glass container, and then place it in a large strainer, the same type that is used to drain pasta. It is then easy to run water over it twice a day. You can place the strainer full of wild rice in a bowl, to avoid getting water everywhere. You may then make delicious salads with the wild rice, or add it to other dishes.


RAW LASAGNA


Just like any Lasagna this dish is all about layers!

Use the Marinara Sauce from below as one of your layers (add fresh basil to it). Set it aside.

Faux Cheese Sauce:
1/2 a cup of Tahini
1/2 cup of Nutritional yeast
Handful of Raw Cashews
Handful of Raw Almonds
3 tbs Olive Oil
2 tbs Apple Cider Vinegar
Tamari to taste


Blend till smooth in food processor, or leave little chunks to simulate cottage cheese. set aside.

1/2 an Eggplant Sliced (length wise as thin as possible). Soak in Tamari and water (These are your Lasagna Sheets)
Slice up Mushrooms and soak in Tamari
Pit 1 Cup of Fresh Olives
2 Cups of Baby Spinach
2 Zucchinis Grated

Layering:
Start with a layer of Eggplant overlapping on the bottom of your pan,
from there put the cheese sauce, then spinach, then mushrooms and olives, pack it down neatly
Next evenly spread the Marinarra sauce over dish and cover with grated Zucchini,
Repeat from the top
Garnish with Zucchini, Basil, Nutritional Yeast, and Olives!

This is a very filling dish!

CHOCOLATE MINT SQUARES


Crust:
1 cup of soaked Dates
1 cup of sugarless Coconut
3 tbs Almond Butter
2 Tbs Raw Cocoa

Mix in Food Processor, spread into pan and freeze

Mint Icing:
2 Avocados
2 Tbs Raw Cocoa
1/2 a cup of Agave Nectar
1 Tbs Peppermint Extract

Mix in the food processor until smooth and fluffy. No one will believe you that this is made with Avocados!
Spread on top of frozen crust and put back into the freezer.

Let this sit as long as possible (even over night) before cutting into squares and garnishing each one with a sprig of fresh peppermint. Leave in the freezer until served.

These were so popular people practically liked the pan.
